I have read that they are expecting a full release at the end of this year, are they still on track for that estimate or will there be delays?
Definitely not. Dates have slipped and we have yet to get our hands on a pre-alpha version of the game, much less a full release. The pre-alpha version would be a more reasonable expectation for 2019 at this point, which would still be something playable. :)

some people discussing vaguely tend to say "maybe still 2019" for the first playable whatever-release.

I get that making a game like this requires A LOT of time and effort, and I don't mind waiting patiently for it. But was still curious, would be nice to have more footage of the job done so far, give us more of a idea of how far along they. If they're already doing that, anyone know where to find the source?

They do have a YouTube channel that has a few recent vid clips (link here), and there are dev posts scattered around on the forums here showing some PreElyria shots and world generation vignettes.
Hasn't been much in the way of actual in game footage so far, folks are hoping the devs will be sharing more "soon."

There are investors investing in AAA games that won’t see returns for decades; this is a natural cycle. You have to build it before they can come.
This being said, CoE gets a huge part of its development cycle (ie city m/world building) out of its users, so a “playable” build isn’t far away
